Cyn-Fyfyriwr Coleg a weithiodd ochr yn ochr â bwyty Heston Blumenthal

Mae cyn-fyriwr Coleg Llandrillo a chogydd hyfforddi sy'n cario seren Michelin, a fu'n gweithio gyda'r cogydd enwog Heston Blumenthal, wedi lansio ei fwyty ei hun yng Nghonwy.

Bu Nick Rudge, 27, yn gweithio yn y Fat Duck yn Bray, Berkshire - bwyty enwog Heston Blumenthal sy'n cario tair seren Michelin, am saith mlynedd cyn symud yn ôl i Gymru wedi cyfnod ar ffyrlo yn ystod y pandemig.

Enw ei fwyty newydd yw The Jackdaw - yr enw traddodiadol ar y bobl sydd wedi'u geni o fewn muriau'r dref. Symudodd Nick yn ôl gartref i Landudno yn gynharach eleni oherwydd bod Covid wedi rhoi stop ar ei waith. Cyn rhoi cynnig ar y fenter newydd hon, roedd wedi bod yn cynnig gwasanaeth tecawê, sef The Jackdaw at Home.

Cafodd swydd yn nhŷ bwyta Heston Blumenthal sy'n cario tair seren Michelin yn 2014 yn syth wedi gadael campws Coleg Llandrillo yn dilyn profiad gwaith llwyddiannus yno.

Ond treuliodd Nick y rhan fwyaf o 2015 yn gweithio gyda Heston Blumenthal yn Melbourne, ar ôl i'r cogydd enwog 'hedfan' y Fat Duck 10,000 i'r de tra bod y tŷ bwyta gwreiddiol yn Berkshire yn cael ei ail-wampio ar gost o £2.5miliwn.

Nick Rudge, 27, worked at Heston Blumenthal's three-Michelin-starred Fat Duck restaurant in Bray, Berkshire for seven years before moving home to Wales after he was furloughed during the pandemic.

His new restaurant is called The Jackdaw - a traditional name given to people born within the town walls. Nick moved back to his home town of Llandudno earlier last year after Covid halted his work. Previous to this new venture, he had been running a takeaway service - The Jackdaw at Home.

He secured a job working alongside renowned food scientist Heston Blumenthal’s restaurant in 2014, immediately after leaving Coleg Llandrillo’s Rhos-on-Sea campus, following a successful work placement.

But changes were afoot, as he spent most of 2015 in Melbourne, after the celebrity chef ‘flew’ his restaurant, The Fat Duck, 10,000 miles south, whilst the original restaurant in Berkshire undertook a £2.5million renovation.

One of Nick’s tutors during his time at Coleg Llandrillo, Brian Hansen, said: “Nick clearly displayed the skills required for excellence in the hospitality industry and is an outstanding role model to our current young students.”
